Spring produce means colorful and delicious salads for lunch and dinner. Here are a few of my favorite healthy salad recipes from my blog and a few others, too.
It’s spring. Did you know that it was spring? I sure didn’t. I mean, we got like 3 to 4 inches of snow last week. What’s up with that winter? You already left! Your gig was over. Or was this just a little postcard for us to remember you by?
Either way, it’s SUPPOSED to be spring. For me, that means farmers markets and fresh produce! Don’t you just love a good farmers market? I love all the different varieties of produce, the interesting selection of meats and cheese, and the total surprises like some new spice blend or olive oil. To me, that’s a good farmers market.
With fresh produce comes some deliciously healthy eating!
I love showcasing all that bright color and freshness in bowls of healthy salad recipes for the family to have for dinner. We have salads of all kinds. From Tex-Mex steak salad with chipotle ranch dressing to this Cuban steak and corn salad. I know. You’re thinking, “why so many steak salads?” Not to worry, I have a bright and flavorful lemon dill orzo shrimp salad and a fried chicken salad. Heck, I’d even make one for lunch on the weekends if I have the chance. And since we’re trying to eat healthier, we see more and more salads in our future.
So, we thought I’d put together some delicious healthy salad recipes to arm you with plenty if ideas on how to use that farm fresh produce for lunch or dinner! Some of them are topped with delicious, lean proteins and some of them contain fiber rich grains for an added layer of healthy to these salads.
Strawberry Chicken Spinach Salad
There’s still time to get some Florida strawberries! When you find them, you can make my simple and delicious Strawberry Chicken Spinach Salad topped with rotisserie chicken. The strawberry dressing makes this salad taste fresh and vibrant!
Alabama Cobb Salad
I basted my chicken breasts in Alabama white barbecue sauce for this Alabama Cobb Salad. She placed it on top of some crisp greens along with sweet tomatoes, sliced avocado, hominy, and some Colby cheese. Her salad is healthier by using low fat ingredients and heart healthy avocados.
Grilled Shrimp Salad Nicoise
Succulent grilled shrimp, tender Dutch baby potatoes, crisp cooked green beans, crunchy red onions, and heart friendly hard oiled eggs are combine in this hearty entree salad. With a typical dijon vinaigrette this Grilled Shrimp Salad Nicoise will satisfy even your most ravenous hunger.
Calypso Caribbean Cobb Salad
I grilled some chicken with a kicked up calypso barbecue sauce for this salad. Something with a spicy kick like that needed some tropical pineapple and hearts of palm. This calypso caribbean cobb salad has a sweet heat of the caribbean that you will love.
Strawberry Salad with Candied Almonds
Family Around the Table combined sweet strawberries and almonds in her salad. She kicked up a side salad by adding some lean chicken to make it an entrée salad. Her Strawberry Salad with Candied Almonds is one of her favorite things!
Easy Shrimp Avocado Salad with Tomatoes and Feta
